Ingredients

1 1/2 cups rolled oats 

1/2 cup amaranth 

1/2 cup macadamia nuts, toasted and chopped 

1/2 cup dried cherries, chopped 

1/2 cup dried apricots, chopped 

1/4 cup honey 

2 large eggs (whites only) 

Kosher salt 

Preparation

Combine oats, amaranth,macadamia nuts, dried fruit,and honey in a medium bowl.Whisk egg whites with 1/4 teaspoonsalt until foamy. Pour overdried fruit and stir to combine.

Preheat oven to 350 degrees. Linea baking sheet with parchment.Scoop 3 tablespoons mixture(using an ice cream scoop)and pat into a 3-inch roundon baking sheet. Bake, rotatingtray, until clusters aregolden brown, 15 to 18 minutes.Let cool completely.Store in an airtight containerfor up to 1 week.
