Ingredients

chicken drumsticks (about 1 pound)

chicken thighs (about 1 pound)

medium mango, peeled, pitted and cubed (1 cup)

tablespoon grated gingerroot

teaspoon finely shredded lime peel

tablespoons lime juice

teaspoon salt

medium green onions, thinly sliced (2 tablespoons)

clove garlic, finely chopped

2

cans (15 ounces each) black beans, undrained

Preparation

Heat oven to 375°.

Place chicken pieces, skin sides up, in ungreased rectangular baking dish, 13x9x2 inches. Bake uncovered 40 minutes. Drain excess fat from baking dish.

Mix remaining ingredients; spoon over and around chicken pieces. Cover and bake about 30 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.
