Ingredients

1 large egg

2 teaspoons unsalted butter, or bacon drippings

Coarse salt and freshly ground pepper

Preparation

Heat an 8-inch nonstick skillet over medium heat; add butter. When butter begins to sizzle, add egg; season with salt and pepper. Cook until egg whites are just set and bottom is lightly golden, 2 to 3 minutes. Serve immediately.
