Ingredients

1 sliced leek 

Butter 

1 cup blanched, peeled fava beans 

1/4 cup chicken stock 

2 tablespoons heavy cream 

Lemon juice 

Salt and pepper 

Poached chicken 

Preparation

Saute leek in butter. Add fava beans and chicken stock. Simmer for 1 minute. Stir in heavy cream. Simmer for 2 minutes. Season with lemon juice, salt, and pepper. Serve on chicken.
