firm-ripe pears, cored and thinly sliced

apple, cored and thinly sliced

cup spinach leaves, torn into bite-size pieces

tablespoon sliced almonds, toasted

oz chèvre (goat) cheese, crumbled

Preparation

In large bowl, beat lemon juice, honey, oil, vanilla and pepper with whisk. Add pears, apple and spinach; toss to coat.

Divide mixture among 4 serving plates. Top with almonds and cheese.
