cup vegetable oil

box (3.9 oz) Betty Crocker™ Mediterranean Style Balsamic Sheet Pan Dinner Starter

medium zucchini, halved lengthwise, then sliced 1/4 inch crosswise

lb uncooked deveined peeled large shrimp, thawed if frozen, tail shells removed (26 to 30 per lb)

cups cherry tomatoes

cup thinly sliced red onions

cup diced cucumber
1/2
cup crumbled feta cheese (2 oz)

tablespoons halved kalamata olives
Chopped fresh Italian (flat-leaf) parsley leaves, if desired
Preparation
Position oven rack 4 inches from broiler. Set oven control to broil. Spray large rimmed sheet pan with cooking spray. In large bowl, mix oil and seasoning mix (from box); reserve 3 tablespoons of the mixture. Add zucchini to bowl; toss to coat, and place in single layer in pan. Broil 3 minutes; stir.
Meanwhile, add shrimp and tomatoes to same bowl, and add reserved oil mixture; toss to coat. Place in pan with vegetables. Broil 5 minutes.
Stir onions into mixture in pan, then broil 2 to 3 minutes longer or until shrimp are pink and cooked through.
Drizzle with some of the sauce (from box). Top with cucumber, cheese, olives and parsley. Serve with remaining sauce.
