Ingredients 6 tablespoons unsalted butter 2 medium russet potatoes 1/4 teaspoon coarse salt freshly ground pepper 3 tablespoons cream cheese 3 tablespoons creme fraiche (or sour cream) 5 ounces sliced smoked salmon 2 teaspoons chopped fresh chives Preparation Melt butter in a saucepan over low heat.
