6 medium sweet potatoes, scrubbed
Preparation
Preheat oven to 350 degrees. Place sweet potatoes on a parchment paper-lined baking sheet. Prick potatoes all over with a fork. Transfer to oven, and roast until fork-tender, about 1 hour and 20 minutes.
