medium carrots, cut into 1/2-inch pieces (1 cup)

medium potato, peeled, cut into 1/2-inch pieces (1 cup)

medium onion, finely chopped (1/2 cup)

medium stalk celery, cut into 1/2-inch pieces (1/2 cup)

bag (16 oz) dried lentils (2 1/4 cups), sorted, rinsed

package (6 oz) sliced Canadian bacon, coarsely chopped

Preparation

In 3 1/2- to 4-quart slow cooker, mix all ingredients. Cover; cook on Low heat setting 8 to 9 hours or until lentils are tender. Stir well before serving.
