Ingredients

Chilled cooked soba noodles 

Thinly sliced cucumbers 

Very thinly sliced radishes 

Halved blanched sugar snap peas 

Vegetable oil 

Soy sauce 

Fresh lemon juice 

Coarse salt and freshly ground pepper 

Preparation

Toss noodles with cucumbers, radishes, and sugar snap peas. Dress with oil, soy sauce, and lemon juice. Season with salt and pepper.
