Ingredients

8 McIntosh apples, peeled, cored, and quartered 

1 cup apple cider 

1/2 teaspoon crushed red pepper 

Pinch of cayenne pepper 

Pinch of freshly ground black pepper 

Preparation

In a wide, heavy-bottomed saucepan, combine all of the ingredients and cook over medium heat, stirring often with a wooden spoon to prevent scorching, for 25 to 30 minutes, until the apples are broken down. Break apart the large pieces with the back of the spoon. Season with pepper and serve.
